Characteristics of
Sesame Oil

Color

The unique color of sesame oil is produced by roasting the sesame seeds.
By varying the roasting temperature and time,
it is possible to create many types of sesame oil ranging in color from dark to light.
It is also possible to create colorless sesame oil by extracting oil from the unroasted seeds.

Aroma

In the same way as the color, the characteristic aroma of sesame oil is produced by roasting the sesame seeds,
and a variety of aromas can be created by varying the roasting temperature and time.
The aroma of sesame is not the result of a single component, and is a complex,
highly varied aroma created by a combination of aromatic chemicals.
It is also possible to produce sesame oil with no aroma by extracting oil from the unroasted seeds.

Flavor

Sesame oil has a unique and instantly recognizable flavor.
The characteristic aroma and flavor of roasted sesame oil combine to produce an oil
that is unlike any other.Unroasted sesame oil is refined during the manufacturing process,
and the degree of refinement is minutely adjusted to maximize the sesame flavor.

Stability

Roasted sesame oil resists oxidation and is an oil with extremely good stability The AOM test [Fig.1] is an index of oil stability, and shows that roasted sesame oil delivers superior results that can be seen in the changes over time that occur when the oil is exposed to the air [Fig.2] .
This is due to the synergistic effects of sesamol, a unique antioxidant component of sesame, with tocopherol (vitamin E )and brown pigment.
Unroasted sesame oil (TAIHAKU sesame oil) does not contain the brown pigment,
and the sesamol and tocopherol are removed during the refinement process.
However excellent stability is provided by the conversion of sesamolin to the powerful antioxidant component sesaminol. [Teble 1]

How are Maruhon
Sesame oils produced?

1.Sourcing

We gather choice sesames from around the world in pursuit of safe raw ingredients. To achieve this, it is best to check their safety first-hand from the sesame farms to the distribution channels. Our memberts of staff literally travel around the world to Asia, Africa, and South America to source delicious sesame.

2.Sorting

Sesames that have been checked for quality on site are shipped to Japan and transported to our Takemoto factory for sorting and to remove sand and debris.

3.Toasting (Taikou)

Taihaku and Taikou Sesame Oils are produced differently. Sesames for Taikou Sesame Oil are toasted at low heat. Sesame oil’s unique nuttiness is produced by toasting.

4.Extraction

Raw sesames for Taihaku Sesame Oil and toasted sesames for Taikou Sesame Oil are pressure-extracted. The technique is known as traditionally pressed extraction method. This method is time consuming, but very important to the Maruhon process.

5.Distillation

Taihaku Sesame Oil is distilled to remove its excess color and aroma. This process produces the Taihaku sesame oil with a light flavor and aroma, while maximizing the umami of sesame.

6.Filtering and bottling

Taihaku Sesame Oil is filtered after distilling. Taikou Sesame Oil is aged and filtered three times to eliminate impurities. Freshly made sesame oils are bottled in clean bottles.
